I need to make a few dairy-based meals I can prepare ahead of time and eat cold on Sunday and Monday during the holiday of Shavuot.  Anyone have any good recipes?  None of my usual ones are sounding too appealing right now.  Might do a pasta salad of some sort, I suppose, and maybe a gazpacho if I find a good recipe, but I'd love more ideas!  (Fish is ok, but no meat, please -- dairy is traditional for this holiday.)

What are the ones that aren't sounding good?

Kugel (my default is a sweet cheese version). Quiche -- spinach, mushrooms, onions, and cheddar? Peanut or sesame noodles. Spanakopita. Apple pie.

For quiche with moist veggies in the filling (mushrooms and spinach being two culprits), I find that pre-cooking the veggies until they stop giving up liquid helps a lot in producing a non-watery quiche.

How about something with Israeli couscous, Caesar salad or a cold salmon with fruit salsa (mango? kiwi)

The recipe is from a friend, so nothing formal to link to, but.... Chop and caramelize two large onions, and fold them into one and a half large logs of goat cheese, then add black pepper and rosemary to taste. Use a lot of rosemary if you want to be able to taste it.

Pre-bake a 9" pie crust and fill it with the mixture, then bake again at 350 degrees for 45 minutes.

Similar to a quiche but firmer and without a crust, I really liked this recipe: cauliflower and parmesan cake. It was delicious cold.

I'd imagine you can find kosher parmesan-like cheese.

A word of warning: there didn't seem to be enough batter to engulf the cauliflower the way I'd expected, either of the two/three times I've made this. But it didn't matter in the end.

I have a cold sesame noodle recipe, if you want it - we usually make them with tofu and veggies.

Maybe shrimp summer rolls? Or this kind of sandwich?

Here it is - it's E's mom's recipe. I usually throw in baked tofu cubes, and either mix in some cold stir-fried veggies or serve them on the side.

1 lb. whole wheat spaghetti (thin or normal)

7 T sesame oil
7 T soy sauce
3-4 T sugar
3 T balsamic vinegar
red pepper flakes

3-6 scallions, chopped
1 bunch cilantro, chopped

Cook noodles
Mix sauce, stir sauce, scallions, and cilantro into noodles
Chill

I'm a giant fan of cucumber, dill & yogurt. It's not a full meal, but if you mix it up early the flavors get really strong and yummy. Use lots of fresh dill.
